Spaghetti with zucchini and shrimps

INGREDIENTS (for 4 people):

  • spaghetti 350 g
  • shrimps 500 g
  • 2 zucchini, medium size
  • 10-12 cherry tomatoes
  • half onion
  • chopped parsley
  • EVO oil
  • salt
  • pepper

Peel the shrimps and remove the black gut, then slice the zucchini into sticks. Place the chopped cherry tomatoes with the chopped onion and oil in a pan. We fry and add the zucchini, adding salt and pepper. Let it cook for about 10 minutes on a moderate flame, courgettes must remain crisp and not fall apart.

Aside, we drop the spaghetti in boiling salted water. When the spaghetti are almost cooked, add the shrimp to the pan, and cook only for a few minutes, otherwise they will harden and become chewy. Drain the spaghetti and sauté them for a few minutes in the pan with the courgettes and the shrimps, also adding the chopped parsley and a pinch of pepper.
